With the missions that Mitsumori is upholding, they specialise on soba noodles, which are made using buckwheat flour from Hokkaido. The tempura is made with a focus on the freshness of the ingredients and lightly battered so you can enjoy the original flavour of the ingredients. The tofu is homemade and the koji is from Oimatsu Sendai Nagata Jozo. We are particular about are the ingredients, fermentation, and craftsmanship.
