We present Yamada Suisan's Karasumi in a beautiful gift box. Karasumi is made by salting and sun-drying the roe of the mullet, and it is known as one of Japan's three great delicacies, alongside uni (sea urchin) and konowata (sea cucumber innards). While there are also versions of karasumi made from tuna roe around the world, mullet karasumi is often referred to as the "Caviar of the Mediterranean" and is considered a high-end delicacy.
3 key features of Yamada’s Karasumi
- Domestic sourced Mullet - We carefully select our ingredients! Only mullet caught in the winter waters of the Hyuganada Sea in Miyazaki Prefecture are used.
- Processing Done Locally - From Hyuganada to Tarumizu in Kagoshima Prefecture, all processing, from preparation to sun-drying, packaging, and shipping, is carried out at Yamada Suisan's Tarumizu facility.
- Using Sea Salt - We are particular about our salt. Instead of regular table salt, we use sea salt, which contains a high concentration of bitter components and is rich in nutrients.
